→ Crackers
01 - 24 whole wheat crackers, round or square
02 - 4 oz sharp cheddar cheese, sliced into 24 small squares
→ Roasted Red Pepper Dip
03 - 4 oz cream cheese, softened
04 - 1/4 cup roasted red peppers, drained and chopped
05 - 1 tbsp mayonnaise
06 - 1/2 tsp garlic powder
07 - 1/4 tsp smoked paprika
08 - Pinch of salt
→ Decoration
09 - 24 thin strips of black olives
10 - 24 small squares of yellow bell pepper or cheddar cheese
# Method:
01 - Preheat the oven to 350°F (180°C).
02 - Arrange the crackers on a baking sheet lined with parchment paper. Place a slice of cheddar cheese on each cracker.
03 - Bake for 4 to 5 minutes until the cheese melts but does not bubble. Remove from oven and allow to cool slightly.
04 - Combine cream cheese, roasted red peppers, mayonnaise, garlic powder, smoked paprika, and salt in a small bowl. Blend until smooth.
05 - Spoon or pipe a dollop of roasted red pepper dip onto the center of each cheese-topped cracker.
06 - Lay a black olive strip across the dip to form the belt. Place a small yellow bell pepper or cheddar square in the center as the buckle.
07 - Arrange the finished crackers on a platter and serve immediately.
