Snowman Crudités with Dip (Printable)

01 - 1 large cauliflower head, cut into florets
02 - 1 large cucumber
03 - 2 medium carrots, peeled
04 - 1 small red bell pepper
05 - 1 small yellow bell pepper
06 - 6 cherry tomatoes
07 - 1 black olive

→ Dip

08 - 7 oz Greek yogurt or sour cream
09 - 2 tablespoons mayonnaise
10 - 1 tablespoon lemon juice
11 - 2 tablespoons fresh chives or dill, finely chopped
12 - 1 garlic clove, minced
13 - Salt and pepper, to taste

# Method:

01 - Slice the cucumber into 0.4 inch rounds. Cut one carrot into sticks for the snowman’s arms, and peel thin ribbons from the second carrot for the scarf. Slice the bell peppers into small strips and pieces for the hat, buttons, and scarf accent. Slice the black olive into thin rounds for eyes and mouth.
02 - On a large serving platter, stack three cauliflower florets vertically in ascending size to form the snowman’s body. Use cucumber rounds as a base to resemble snow. Position carrot sticks as arms, and wrap carrot ribbons around the neck as a scarf. Place black olive slices for eyes and mouth, a small carrot piece for the nose, and bell pepper strips to form the hat and buttons. Arrange cherry tomatoes and remaining vegetables around the snowman to enhance the display.
03 - In a small bowl, whisk Greek yogurt, mayonnaise, lemon juice, fresh chives or dill, and minced garlic until smooth. Season with salt and pepper to taste.
04 - Place the herb dip in a small bowl alongside or within the platter for convenient dipping.
